  1. Bring medium saucepan of water to a boil.
  2. Core tomatoes and cut an "X" in bottom of each.
  3. Plunge into boiling water 30 seconds.
  4. With slotted spoon, immediately remove to bowl of cold water.
  5. When cool enough to handle, peel tomatoes.
  6. Cut each tomato horizontally in half (through equator) and squeeze out seeds.
  7. Finely dice tomatoes and place in serving bowl.
  8. Stir in remaining ingredients along with 1 tablespoon water.
  9. Mix well.
