  1. Wash callaloo, leaves and stems.
  2. Hold together in a bundle and chop into small pieces (leaves and stems).
  3. Chonko (saute) onion and garlic in margarine.
  4. Add chopped callaloo.
  5. Season with chicken seasonings/salt, and yellow ginger (optional).
  6. Cook over low heat for 10–15 minutes.
  7. Add a little water if necessary.
  8. Serve with white rice and meat.
