Ingredients[]
- 3 medium leeks (white parts only)
- 4 cups vegetable oil, for deep-frying
- Salt
Directions[]
- Cut the leeks into long strips about inch wide.
- Rinse well in at least two changes of water; drain well and pat dry.
- Heat the oil in a medium, deep heavy pot or deep-fryer to 360°F.
- Add the leeks, in batches, and fry until golden, about 45 seconds.
- Remove with a slotted spoon and drain on paper towels.
- Season with salt and serve.
YIELD: MAKES ABOUT 1 CUP
