  1. Cut the leeks into long strips about  inch wide.
  2. Rinse well in at least two changes of water; drain well and pat dry.
  3. Heat the oil in a medium, deep heavy pot or deep-fryer to 360°F.
  4. Add the leeks, in batches, and fry until golden, about 45 seconds.
  5. Remove with a slotted spoon and drain on paper towels.
  6. Season with salt and serve.

YIELD: MAKES ABOUT 1 CUP
