Fried Rice

 2 T. chopped onion

1 can mushrooms, drained 1/2 C. cooked chicken, ham or pork 2 T. cooking oil 4 C. cold cooked rice 2 T. soy sauce 1 egg well beaten 1/8 t. pepper

 Saute' onion, mushrooms and meat in oil in a skillet until tender.  Add rice and soy sauce.  Cook over low heat 5-10 minutes stirring occasionally with a fork.  Add egg and pepper.  Cook over low heat 5 minutes stirring constantly with a fork.  If desired add additional soy sauce.
