Ingredients[]
- 1 c. butter
- 2 c. powdered sugar
- 9 tbsp. unsweetened chocolate or 3 (1 oz.) squares melted and cooled
- 5 egg yolks
- 1/2 tsp. peppermint extract
- 2 tsp. vanilla extract
- 1 c. vanilla wafer cookie crumbs
- 18 cupcake liners
- whipped cream (optional)
Directions[]
- Beat butter and sugar.
- Add the chocolate then egg yolks. Beat.
- Add vanilla and peppermint flavor. Mix well.
- Line bottom of cupcake holders with cookie crumbs.
- Place large spoonful of mixture in each.
- Place in freezer 45 minutes or 1 hour before serving.
- May be topped with whipped cream. Enjoy.
