Toasted coconut coats these delicious white chocolate no-bake clusters that chill in the fridge until you're ready for them. They will store in an airtight container in the refrigerator for up to one month, or in the freezer for up to two months.

  1. Heat chocolate in medium heavy saucepan on lowest heat, stirring often, until chocolate is almost melted.
  2. Remove from heat.
  3. Stir until smooth.
  4. Add next 3 ingredients.
  5. Stir well.
  6. Let stand at room temperature for 1 to 1 11/2 hours until cool enough to handle.
  7. Place coconut in large shallow dish.
  8. Drop mounds of chocolate mixture, using 1 tbsp. (15 ml) for each, into coconut.
  9. Roll in coconut until coated.
  10. Arrange on waxed paper-lined baking sheet.
  11. Chill until firm.

Makes about 48 clusters
