This nutritious loaf makes for a smart choice on Christmas morning.
Ingredients[]
- 1/2 cup (125 ml) chopped dried apple
- 1/2 cup (125 ml) chopped dried apricot
- 1/4 cup (60 ml) chopped dried pineapple
- 1 1/2 cups (375 ml) boiling water
- 1 1/2 cups (375 ml) all-purpose flour
- 1/2 cup (125 ml) chopped pecans, toasted
- 1/2 cup (125 ml) granulated sugar
- 1/2 cup (125 ml) whole-wheat flour
- 1 1/2 tsp (7 ml) baking powder
- 1/2 tsp (2 ml) salt
- 1/4 tsp (1 ml) baking soda
- 1 large egg
- 1/2 cup (125 ml) pineapple juice
- 1/2 cup (125 ml) unsweetened applesauce
- 3 tbsp (50 ml) cooking oil
- 1 tsp (5 ml) vanilla extract
Directions[]
- Combine first 4 ingredients in medium heatproof bowl.
- Let stand, uncovered, for about 10 minutes until softened.
- Drain.
- Combine next 7 ingredients in large bowl.
- Make a well in centre.
- Beat remaining 5 ingredients in medium bowl.
- Add apricot mixture.
- Stir.
- Add to well.
- Stir until just moistened.
- Spread evenly in greased 9 x 5 x 3 inch (23 x 12.5 x 7.5 cm) loaf pan.
- Bake in 350°F (175°C) oven for about 55 minutes until wooden pick inserted in centre comes out clean.
- Let stand in pan for 10 minutes before removing to wire rack to cool.
