  • Makes 16 servings of fruit smoothie no bake cheesecake.

  1. Line 13x9 inch baking pan with foil, extending foil over sides of pan.
  2. Mix graham crumbs, butter and 2 tbs sugar, press onto bottom of pan.
  3. Refrigerate.
  4. Beat cheese and ½ cup sugar in bowl until blended.
  5. Smash berries, stir into cheese mixture.
  6. Stir in 2 cups of Cool Whip.
  7. Spoon over crust, cover.
  8. Refrigerate 4 hours or until firm.
  9. Use foil to remove cheesecake from pan before cutting into pieces to serve.
  10. Top with remaining cool whip.
  11. Garnish with whole berries and a mint sprig.
