  1. Spray a large skillet with cooking spray.
  2. Add carrots, parsnips, pears, orange juice, dates and ginger.
  3. Stir to combine.
  4. Bring to boiling then reduce heat to simmer, uncovered, for about 7 minutes or until vegetables are crisp-tender.
  5. Add sugar and butter and stir to coat vegetable mixture.
  6. Cook for an additional 2–3 minutes then serve as a side dish.
