The classic definition of fusion is the merging of distinct elements into a unified whole. The term “fusion cooking was” first used 10 to 12 years ago to describe the merging of Asian and “Western” ingredients and cooking techniques being done mostly by California chefs. The term has expanded to include the merging of other cuisines in other geographic areas to produce new concepts for restaurant menus.
