1-1/4 C. Cornmeal

2 tbs. . Baking powder

1 c. Cheddar, shredded

8 oz. Corn

1 c. Sour Cream

4 oz. Chilies chopped

� c. Canola oil

2-3 Eggs, lightly beaten

Combine cornmeal, powder; add cheese, corn, sour cream &

chilies; stir till combined; add oil/eggs and stir till just

combined; DO NOT OVERMIX. Batter will be very stiff; place

batter into greased muffin cups and bake @ 400� for 18-20 min.

Serve warm.
