The Galactic Federation is made up of creatures from all over the universe. Although they all look different, they work well together—just like the ingredients in these tasty kebabs. The peppers, ginger, and chicken in this recipe may not seem like they’d be a good fit, but it turns out they’re stronger together than they are apart!
Ingredients[]
- ½ cup sriracha hot sauce
- ½ cup soy sauce
- ¼ cup lehua honey (Hawaiian honey made from lehua blossoms)
- ¼ cup apple cider vinegar
- 1 tablespoon rice vinegar
- ¾ cup sesame oil
- 1 tablespoon minced fresh ginger
- 4 cloves garlic, minced
- 2 pinches sea salt
- 2 pinches freshly ground pepper
- 1 ¼ pounds skinless chicken breast, chopped into bite-sized pieces
- 12 white mushrooms, halved
- 1 large red bell pepper, cut into 1 ½-inch pieces
- 1 large green bell pepper, cut into 1 ½-inch pieces
- 12 cherry tomatoes
- 3 tablespoons paprika, optional
- 3 tablespoons edible gold glitter, optional
Directions[]
- Whisk together the sriracha, soy sauce, honey, apple cider vinegar, rice vinegar, sesame oil, ginger, garlic, sea salt, and ground pepper in a large bowl.
- Add the chicken and mushrooms to the marinade mixture.
- Toss to coat the chicken and mushrooms.
- Chill in the refrigerator, covered, for 1 hour.
- Preheat an outdoor grill to medium-high heat (375° to 450°F). (Note: If you don’t have a grill, you could use an indoor electric grill or a large frying pan. If you are using a pan, lightly oil the pan with the cooking oil of choice and cook for the same time, or until the chicken is cooked.)
- Drain the marinade from the chicken and mushroom mixture over a small saucepan.
- Bring the marinade to a boil over high heat.
- Reduce the heat to medium-low and simmer for 10 minutes.
- Pour half of the marinade into a small bowl to baste the skewers.
- Thread the chicken, mushrooms, red and green bell peppers, and tomatoes onto the skewers.
- Ensure your grill or pan is clean and lightly oiled.
- Grill the skewers and brush them with the basting half of the marinade, turning the skewers over occasionally, about 2 minutes, or until the chicken is fully cooked.
- Right before you serve, if desired, sprinkle a mixture of paprika and edible gold glitter to give a galactic shine to the dish.
