Ingredients[]
- 6 cups romaine lettuce, torn into bite-sized pieces
- 6 oz canned garbanzo beans, rinsed and drained
- 1 cup diced ripe tomatoes or cherry tomatoes, halved
- ¼ cup crumbled blue cheese
- 2 tbsp soy “bacon” bits
- ¼ cup prepared low-sugar dressing or olive oil vinaigrette
Directions[]
- Arrange lettuce on platter.
- Arrange garbanzos, tomatoes, blue cheese and soy “bacon” bits over the lettuce.
- Just before serving, drizzle dressing over salad, and toss well.
- Serve on chilled plates.
