This is a great side dish for roast chicken or grilled salmon.
Ingredients[]
- 1/4 cup low-fat buttermilk
- 3 tablespoons light mayonnaise
- 1 tablespoon fresh lemon juice
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
- 3 cups sliced Savoy cabbage
- 1 cup (1-inch) diagonally cut wax beans, steamed
- 1/2 cup snow peas, trimmed and cut lengthwise into thin strips
- 1/2 cup red bell pepper strips
- 1/3 cup shredded carrot
- 1/4 cup vertically sliced red onion
- 1 tablespoon chopped fresh tarragon
Directions[]
- To prepare dressing, combine first 6 ingredients, stirring with a whisk.
- To prepare salad, combine cabbage and remaining 6 ingredients in a large bowl.
- Add dressing mixture; tossing to combine.
- Chill 30 minutes.
Yield: 6 servings (serving size: 3/4 cup)
