This simple vegetable side dish also pairs well with pork and beef.

  1. Peel broccoli stems using a vegetable peeler.
  2. Combine broccoli and water in a large nonstick skillet; cover and cook over medium-high heat 6 minutes or until crisp-tender.
  3. Remove broccoli from pan; wipe pan with a paper towel.
  4. Melt butter in pan over medium heat.
  5. Add salt, pepper, and garlic; cook 2 minutes, stirring frequently.
  6. Add broccoli, and toss to coat.
  7. Sprinkle broccoli mixture with rind; drizzle with lemon juice.

Yield: 4 servings (serving size: 1 cup)
