Fillets that are more than an inch thick will take longer than 15 minutes to cook.
Ingredients[]
- 4 (6-ounce) salmon fillets (about 1 inch thick)
- Cooking spray
- 1/2 cup pineapple preserves
- 1 1/2 tablespoons lime juice
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoon bottled ground fresh ginger
- 1 teaspoon bottled minced garlic
- 1 teaspoon low-sodium soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions[]
- Preheat oven to 425°.
- Place fillets in a 13 x 9-inch baking dish coated with cooking spray.
- Combine preserves and remaining 7 ingredients; pour over fillets.
- Bake at 425° for 15 minutes or until fish flakes easily when tested with a fork.
Yield: 4 servings (serving size: 1 fillet)
