Most West Africans don't drink with their meals, preferring a glass of water before or after. This cooling beverage might be served on warm days when friends come for a visit.

  1. Combine 1 cup water and sugar in a small saucepan over medium-high heat; cook 5 minutes or until sugar dissolves, stirring with a whisk.
  2. Place ginger on a double layer of cheesecloth.
  3. Gather edges of cheesecloth together; tie securely.
  4. Place cheesecloth bag in a large pitcher, and add lemon juice.
  5. Add sugar mixture and 5 cups water to pitcher, and stir well.
  6. Refrigerate lemonade 2 hours or until chilled.
  7. Discard cheesecloth bag.

Yield: 8 servings (serving size: 1 cup)
