Ginger Tea Cookies

2 cups all-purpose flour 1 teaspoon cream of tartar 1 teaspoon baking soda 2 teaspoons ground ginger 1 teaspoon ground cinnamon 1 teaspoon minced crystallized ginger 1/4 teaspoon ground cloves 1/2 teaspoon salt 3/4 cup (1-1/2 sticks) butter, softened 1 cup granulated sugar 2 large eggs, room temperature 1 teaspoon vanilla extract

Combine the flour, tartar, baking soda, ground ginger, cinnamon, crystallized ginger, cloves, and salt together in a medium mixing bowl and mix well. In another large mixing bowl, beat the butter and sugar with an electric mixer until fluffy. Add the eggs and vanilla. Gradually add the flour mixture and mix on low until combined. Cover the dough with plastic wrap and chill for 1 hr. Preheat the oven to 325 degrees F. Form the dough into 1-inch balls and place on nonstick cookie sheets, spacing about 1-1/2 inches apart. Bake for 20 mins.
