  1. Cook onions and celery in butter in large skillet over medium heat until tender crisp.
  2. Add rice, apricots, ginger, salt, pepper and lemon juice; heat thoroughly, tossing lightly with fork.
  3. Press firmly into individual custard cups or molds; let stand 3 minutes.
  4. Unmold on serving dish.
