Golden Carrot Bake 6 servings

 3 c. shredded carrots
 2 c. cooked rice
 1 1/2 c. shredded cheese
 1 1/2 c. milk
 2 beaten eggs
 2 Tbsp. minced onion
 1 t. salt
 1/4 t. pepper
 1/2 c. shredded processed cheese
 Combine carrots, rice, 1 1/2 c. of the cheese, milk and eggs.  Stir in onion, salt and pepper.  Pour mixture into a greased 1 1/2-quart casserole dish.  Sprinkle with remaining 1/2 cup of cheese.  Bake at 350 for 50 to 60 minutes.
