2 pounds sweet onions 3 tbs unsalted butter 1 tsp sugar 1/4 cup white wine 3 cups chicken broth Black pepper or Hot pepper, to taste 4 slices French bread, lightly toasted 1/2 cup shredded Gruyere cheese

Cut onions in half, then thinly slice. In a pot, heat butter. Add onions and stir to coat. Cover and cook 10 min. Add sugar and cook uncovered 6 more min. or until onions are golden. Add wine and cook 1 min. Add broth and 2 cups water, bring to a boil, then reduce heat, cover and cook 5 min.

HEAT BROILER. Place 4 ovenproof bowls on a baking sheet. Divide soup among bowls, stirring in pepper or hot sauce. Top each with toasted bread, sprinkle cheese over bread. Broil 4 min. or until cheese melts. MAKES 4 SERVINGS.*
