Golden rice[]

  1. Cook onion and rice in butter until rice is golden.
  2. Add broth and saffron; heat to boiling. Stir once.
  3. Cover, reduce heat, and simmer for 15 minutes or until liquid is absorbed.
  4. Add cheese and toss lightly.
  5. Spoon into buttered 8-inch ring mold.
  6. Place mold in pan of hot water for about 10 minutes.
  7. Unmold onto platter and fill with Hot chicken salad.

Hot chicken salad[]

  1. Combine chicken, celery, onion, chutney, peas, salt, pepper and dressing.
  2. Toss lightly.
  3. Spoon into casserole and bake at 450 °F for 20 minutes, or until hot.
