  1. In a large pot, sauté the celery, carrot, onion and garlic in butter until very tender, covered, 15 minutes.
  2. Sprinkle the xanthan gum lightly over the surface of the vegetables; stir in well.
  3. Add all but the parsley.
  4. Bring to a boil; cover and simmer 30 minutes.
  5. Adjust seasoning, if needed, and add the parsley.

Notes Edit

  1. Most smoked sausage has sugar in it and about 1 carb per ounce. Boar's Head Kielbasa has no sugar or carbs.
