  1. Wash beans and add water and salt.
  2. Cook until tender. (If fresh beans are unavailable, omit this first step. Instead, drain and rinse canned beans.)
  3. Drain, reserving water.
  4. To ½ cup cooking water, add vinegar, oil, onion, garlic, and oregano.
  5. Pour over beans and let stand for at least 6 hours.
