Green Chile and Artichoke Dip

1 cup chopped unmarinated artichokes 1 can diced green chilies (4 oz) 3/4 cup chopped black olives 1 cup grated Parmesan cheese 1 cup mayonnaise 1/2 cup grated Cheddar cheese

In a pan, heat artichokes, chilies, olives, Parmesan and mayonnaise on medium heat until just heated through. Add cheddar cheese and stir until melted. Transfer to a fondue pot and keep warm over low flame. This is a quick recipe that is very popular with guests. Serve with assorted cubes of bread, crackers, bread sticks and vegetables. You may also use marinated, well drained artichokes. They make the dip a little oilier, but more flavorful. Makes 3 1/2 cups. Source: Unknown
