Directions Edit

  1. Lightly sprinkle both sides of boneless, skinned, chicken breasts with seasoned pepper.
  2. Grill; slice into strips.
  3. Reserve 2 tablespoons juice from can of pineapple slices.
  4. Prepare salad dressing (directions follows).
  5. Brush pineapple slices with some salad dressing, grill 2 – 3 minutes.
  6. Arrange chicken and pineapple over lettuce and vegetables.
  7. Top with salad dressing.

Salad dressing Edit

  1. In a covered jar, combine oil, hot soy sauce, 2 tbsp pineapple juice, white vinegar, honey and ground ginger.
  2. Shake well.
