Use a spreadable soft goat cheese.
Ingredients[]
- Cooking spray
- 1/2 cup (4 ounces) goat cheese
- 1 (10-ounce) Italian cheese-flavored pizza crust, cut in half horizontally
- 1/2 cup chopped fresh basil
- 1 (7-ounce) bottle roasted red bell peppers, drained
- 3/4 pound thinly sliced cooked turkey breast
Directions[]
- Heat a large nonstick skillet coated with cooking spray over medium heat.
- Spread cheese over one half of crust.
- Arrange basil, peppers, and turkey over cheese.
- Top with remaining half of crust, and cut into 4 wedges.
- Add sandwiches to pan; cook 3 minutes on each side or until browned.
Yield: 4 servings (serving size: 1 sandwich)
