Use a spreadable soft goat cheese.

  1. Heat a large nonstick skillet coated with cooking spray over medium heat.
  2. Spread cheese over one half of crust.
  3. Arrange basil, peppers, and turkey over cheese.
  4. Top with remaining half of crust, and cut into 4 wedges.
  5. Add sandwiches to pan; cook 3 minutes on each side or until browned.

Yield: 4 servings (serving size: 1 sandwich)
