This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Hager estate in Canton, Texas in 1982.

  1. Whisk first 5 ingredients to blend then mix in chicken, bell pepper, onion, cilantro and jalapeño.
  2. Season with salt and pepper to taste.
  3. Add lettuce to chicken salad and toss.
  4. Garnish with tomato wedges.
