  1. Peel desired number of tomatoes.
  2. This can be done easily by plunging each tomato in boiling water, then into iced water for a few seconds.
  3. Peel tomatoes. If they have a lot of seeds and liquid, press them out.
  4. Slice and sprinkle with salt and pinch of Sugar (optional).
  5. Drain after half an hour and season with vinaigrette, parsley and chopped shallots. Chill.
