- 1 pound ground beef
- 1 cup onion, chopped
- 4 cups water
- 4 cups tomato juice
- 1 cup potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, chopped
- 2 teaspoons salt
- 1 small bay leaf
- pinch basil
- Brown ground beef and onions.
- Add water and tomato juice and heat to boiling.
- Add diced potatoes, carrots, celery, salt, bay leaf, and a small pinch of basil.
- Simmer until vegetables are done (about 30 minutes).
