Hawaiian Toast with Custard Sauce

2 eggs 1/2 c milk 1 tbsp honey 1/2 tsp salt 1/4 tsp vanilla 1 tbsp butter (softened) 6 slices bread 3/4 c finely crushed corn flakes 6 pineapple slices (drained) 2 oranges (peeled, sliced) Custard Sauce (recipe below)

Combine first 5 ingredients in bowl, beating slightly. Spread butter over 10x15x1 baking dish. Dip bread in egg mixture; drain. Coat with crumbs. Place in buttered dish. Bake at 400� for 5 min; turn. Bake for 5 to 7 min or until crisp. Top each slice of toast with pineapple and orange slices and 1/2 c Custard Sauce.

Custard Sauce

1/3 c honey 2 tbsp flour 1/2 tsp salt 2 c milk 3 eggs 1 tsp grated orange rind

Combine first 3 ingredients in bowl, blending well. Stir in milk, mixing well. Cook over low heat until smooth and thick, stirring constantly. Beat eggs and orange rind in small bowl. Stir a small amount of hot mixture into eggs. Add eggs to hot mixture, stirring constantly. Cook over low heat until thickened, stirring constantly.

What counts is not necessarily the size of the dog in the fight - it's the size of the fight in the dog......
