Fresh rosemary, pine nuts, and almonds, flatter these lacy cheese wafers. Lifting a delicate baked wafer isn't a problem when you line a baking sheet with a nonstick mat. And you skip a greasing pan.
Ingredients[]
- 1 cup coarsely grated Parmigianino-Reggiano cheese (see Note)
- 1/3 cup sliced almonds
- 2 tablespoons chopped pine nuts
- 2 teaspoons chopped fresh rosemary
Directions[]
- Line a baking sheet with a nonstick baking mat.
- Combine all ingredients in a bowl.
- Divide cheese mixture evenly into 4 piles on a work surface.
- Working with one portion at a time, divide pile evenly into 5 smaller piles, placing them at least 1" apart on baking mat.
- Gently flatten each pile into a 2" to 2 1/2" circle, making sure there are no large holes.
- Bake at 400° for 4 to 5 minutes or just until edges are browned and wafers are bubbly throughout; remove from oven.
- Working quickly, carefully transfer hot wafers with a thin spatula to a cooling rack.
- Cool completely.
- Repeat process with remaining cheese mixture.
Yield: 20 wafers
