This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mclean Estate in Irving, Texas in 1982.

  1. Cut up chicken and dip in beer.
  2. Put flour and cornmeal into a brown paper bag adding seasonings to taste.
  3. Put chicken pieces in bag one at a time and shake.
  4. Fry in lard in a hot cast iron skillet.
