These are homemade replacements for the instant pudding mixes found in a number of North American recipes. [1]

Vanilla Pudding Mix

  • 3 cups nonfat dry milk
  • 4 cups sugar
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 3 cups cornstarch
  • 1/2 teaspoon vanilla extract

Chocolate Pudding Mix

  • 2 1/2 cups nonfat dry milk
  • 5 cups sugar
  • 3 cups cornstarch
  • 1 teaspoon salt
  • 2 1/2 cups unsweetened cocoa (or drinking chocolate)

Coconut Cream Pudding Mix

  • 3 cups nonfat dry milk
  • 4 cups sugar
  • 1 teaspoon salt
  • 3 cups cornstarch
  • 1 1/2 cups ground shredded unsweetened coconut
  • 1 teaspoon coconut extract

Butterscotch Pudding Mix

  • 2 cups nonfat dry milk
  • 5 cups brown sugar, packed
  • 1 teaspoon salt
  • 3 cups cornstarch
  • t teaspoon caramel extract

DirectionsEdit

  1. Mix all except the flavouring extracts, and store in an airtight container.
  1. To prepare, mix 1/2 cup of mix to 2 cups milk.
  1. Heat and stir constantly while boiling.
  1. Cool, then add the flovoring extract.
