Baked salmon with an appetizing and colorful Cajun spice coating. Serve with fresh lemon wedges - a squeeze will bring out the subtle honey sweetness.
Ingredients[]
- 1/3 cup (75 ml) liquid honey
- 2 tbsp. (30 ml) gin
- 1 tbsp. (15 ml) lemon juice
- 2 lbs. (900 g) salmon fillet
- 3 tbsp. (50 ml) Cajun seasoning
Directions[]
- Combine first 3 ingredients in small cup.
- Place fillet on foil-lined baking sheet with sides.
- Brush with 1/4 cup (60 ml) honey mixture.
- Sprinkle with Cajun seasoning.
- Cook in 350°F (175°C) oven for about 30 minutes until fish flakes easily when tested with fork.
- Drizzle with remaining honey mixture.
