Hot Chilli Potatoes

  1 cup pasta sauce
  2 tablespoons (8 tsp) chilli sauce
  1/2 cup drained, canned kidney beans
  2 large potatoes, cooked (see note)
  1/4 cup grated vegan cheese
  2 tablespoons (8 tsp) vegan sour cream

1. Simmer sauces and beans in a small saucepan for 5 minutes, until heated.

2. Reheat potatoes in microwave on HIGH (100%) power for 2 minutes. Cut a cross in the top of each potato. Press sides together to open top and form a slight cavity in the centre of the potato.

3. Top with vegan cheese, chilli mix and a dollop of vegan sour cream. Serve immediately.

NOTE: To cook whole potatoes, pierce the skin then microwave on HIGH (100%) power for 5 to 7 minutes or until tender.
