Icelandic Curly Peters
Ingredients
- 225 gm moist brown sugar
- 225 gm butter or margarine s at room
- 1 x egg
- 1 tbl warmed syrup
- 1 tsp cinnamon
- 110 gm chopped walnuts
- 110 gm raisins
- 225 gm self raising flour
Directions
Pop them into an airtight tin as soon as they are cold then re crisp them in the oven later if you feel they need it. Preheat the oven to gas mark 4 350F 180C. You'll also need two large baking sheets (greased). First of all cream the butter and Sugar together till you have a pale fluffy dropping consistency then break in the whole egg and add the syrup. Stir these in using a wooden spoon until the mixture is quite smooth. Now sift in the flour and cinnamon and gradually fold this in finally adding the walnuts and raisins. Then drop rounded teaspoonfuls of the mixture on to the baking sheets about 10 on each one (this wont use up all the mixture but see below). Bake this first batch of biscuits for about 20 minutes during which time they will have spread out quite a bit. Take them out of the oven then after a couple of minutes remove them from the baking sheets to a cooling tray. Then finish off the rest of the mixture as above. Makes 3 to 4 dozen
