To make a really great tasting Potato salad, use baking potatoes and cook it with the skin on and sprinkled with red wine vinegar while still warm.

  1. Boil potatoes with skin on until cooked.
  2. Drain, peel and slice in halves.
  3. Cut potatoes in small chunks.
  4. Put in bowl and sprinkle with vinegar.
  5. Add celery, onion, eggs, pepper and mayonnaise.
  6. Mix well.
  7. When ready to serve, lay out lettuce leaves on a platter.
  8. Put potato salad.
  9. Top with egg slices and sprinkle with a little paprika.
