  1. Boil cassava leaves until tender.
  2. Add chopped green onions, eggplant, spinach and green peppers.
  3. Cook on medium heat for 10 minutes.
  4. Add palm oil and peanut butter.
  5. Simmer for 10 minutes, stirring occasionally, serve with rice or bread.
