  1. Sauté beef, onion and garlic until meat loses it's read color.
  2. Add spinach, rice and jack cheese.
  3. Mix well.
  4. Mix the eggs, milk, salt and pepper.
  5. Stir into rice/meat mixture.
  6. Turn into greased shallow 2 quart casserole.
  7. Bake at 350°F for 30 minutes or until set.
  8. Meanwhile.
  9. Blend tomato sauce and seasonings.
  10. Simmer about 5 minutes.
  11. Cut quiche into squares and serve topped with tomato sauce and Parmesan cheese.
