Italian Chicken

3 1/2 lbs. chicken pieces Salt and pepper 1/4 cup olive oil 1 medium onion, thinly sliced

8 oz. mushroom, sliced

2 cloves garlic, minced 1 t. basil 1/2 t. oregano 2 cups spaghetti sauce (homemade or store bought) 1/2 cup sliced ripe olives 1/2 cup Soave wine 1 jar marinated artichoke hearts, drained (6 oz)

Sprinkle chicken with salt, and pepper and saute in oil in large pot until brown. Remove saute onion, mushrooms, garlic, basil, oregano and 1/4 t. salt 3 minutes. Stir in sauce, olives and wine. add chicken, spooning sauce over. Heat to boiling. Reduce heat. Simmer, covered until chicken is tender, about 45 minutes. Stir in artichokes. Cook 3 minutes.
