  1. Heat oil in large skillet over medium-high heat.
  2. Add onions; cook 3 to 5 minutes or until onions are tender.
  3. Add garlic, cook 2 minutes; remove from heat.
  4. Stir in rice, creamed spinach, milk, ham and nutmeg.
  5. Coat 13x9-inch pan with vegetable cooking spray.
  6. Turn into casserole, top with cheese.
  7. Bake in 375 °F oven for 25 to 30 minutes or until bubbly and thoroughly heated.
