  1. Combine and beat oil, sugar and eggs together.
  2. Sift together flour, baking soda, cinnamon and salt.
  3. Add to the sugar and oil mixture.
  4. Add vanilla, beets, cottage cheese, pineapple, nuts and coconut.
  5. Mix well.
  6. Bake in a greased and floured 9 x 13 inch pan at 350 °F for 50 to 60 minutes.
  7. Frost with cream cheese frosting.
