Kale recipes has been all the rave over the last few years, as the world makes its transition into an era of health, longevity and research. Kale has been featured in multiple articles, papers, and even long term diet experiments all of which underline its important health benefits and possible cancer reducing antibodies. Kale has been a media hit; from claiming the title super health food to miracle vegetable. Kale is a form of cabbage, in the “Brassica oleracea species” which is also consists of broccoli, cauliflower, collard greens, and Brussels sprouts. All of which we know are healthy for us because of their terrible taste in our youth ;) . Kale is actually very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. Kale, along with its family member broccoli contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties. Boiling is actually the least healthy way to cook kale because it decreases the level of sulforaphane; however, steaming, microwaving, or stir frying do not result in significant loss. Kales recent media hits have involved the popular show Iron Chef, where Kale was featured as an ingredient in the chefs menus. Kales health benefits and popularity cannot be denied however it plays a much bigger part in the background then one would think. For anyone who follows the Paleo diet you know that kale is one of the holy grail foods to you, and little compares to it besides broccoli. Having been an avid Paelo Dieter for the last year and a half, I found that Kale can be the difference between lack of nutrition and a healthy lifestyle. With that said, kale has many uses and recipes that can be found all over the web, one recipe that everyone must try is kale chips, which are no doubt the dieters potato chip!
