Makes 6 servings. Serve with broiled chicken, roast turkey or white fish.

  1. Cook onion and garlic in butter until tender.
  2. Add rice, salt, ginger, chili powder, pepper, tomatoes, coconut and ⅓ cup nuts. Toss lightly.
  3. Fold in yogurt. Heat through.
  4. Top with remaining ⅓ cup nuts.
