Kemp's Mexican Dish

3 lbs. ground beef 1/2 can (#303) jalapeno peppers and tomatoes 1 can (#2) Spanish rice 1/4 cup (#303) enchilada sauce 6 tortillas 1 small onion 2 tomatoes 1/2 head lettuce 1/2 lb. American cheese

In large skillet, saut� meat and drain excess grease. Add jalapeno peppers and tomatoes, Spanish rice and enchilada sauce to meat and simmer for about 1/2 hour. Fry tortillas until light brown. Chop onion, tomatoes, lettuce and grate cheese. Stuff half of the meat mixture into folded tortillas to make tacos, and place them in baking dish. Cover with remaining sauce, cheese, tomato and onions (in this order) and heat in 400 oven until cheese melts. Cover with crisp lettuce that has been chopped and serve Serves 6 Source: My Old Recipes
