  1. In a 6-quart saucepan or pot, combine all ingredients except salt, pepper and cheese.
  2. Simmer partially covered for 1½ to 2 hours.
  3. Discard the parsley bundle; season to taste.
  4. Pour into hot soup bowls and garnish with cheese.
