Very tasty for sausage and potato lovers. I sometimes omit the apple slices, and add more potatoes.

  1. Crumble sausage into large heavy skillet and cook until lightly browned.
  2. Remove from the pan and keep warm.
  3. Pour off all except 2 tablespoons of the pan drippings.
  4. Cook the onions in the drippings until golden brown and transparent.
  5. Add the apple slices and cook until tender.
  6. In a buttered 2 quart casserole, arrange layers of potatoes, sausage, and onion-apple mixture.
  7. Bake in a moderate 350°F oven for 30 minutes or until thoroughly heated.
  8. Serve over rice or pasta
