Lady Di's Delight

Serve this golden, sweet cake still warm, with a scoop of vanilla ice cream. The dessert is best served the same day it's baked.

2 eggs 2 cups granulated sugar, divided 2 cups self-rising flour Pinch salt 1 (15-ounce) can fruit cocktail 2 teaspoons baking soda 1 (12-ounce) can evaporated milk

Preheat oven to 375 degrees. Lightly grease and flour a 9-inch-square cake pan or baking dish. In a mixing bowl, beat together the eggs and 1 cup sugar. Stir in the flour and salt. Drain the fruit cocktail over a bowl, reserving fruit and liquid separately. Stir the baking soda into the liquid until it is well-blended and frothy, then stir it into the batter. Fold in the reserved fruit. Bake the cake for 30 to 40 minutes, until it springs back when lightly touched in the center. Remove from the oven.

In a small saucepan over medium heat, combine the evaporated milk and remaining 1 cup sugar. Stir until the mixture is warm and the sugar is dissolved. Pour the syrup evenly over the warm cake. Serve warm with ice cream. Delma
