When not stretching at the barre or practicing her leaps, ballerina Lime Chiffon appreciates a citrusy dessert. So does her pet parrot Parfait! You don't heave to be a dancer or a bird to leap on these lime bars, though. They include key lime juice for extra tartness, a graham cracker crust, and whipped cream topping. (You can also omit the whipped cream, if preferred.)

- 3 cups graham cracker crumbs
- 1/2 cup granulated sugar
- 12 tablespoons (1 1/2 sticks) unsalted butter, melted
- 6 large eggs
- 3 cups granulated sugar
- 1/2 cup all-purpose flour
- 1 cup key lime juice
- 1 teaspoon vanilla extract
- 2 tablespoons confectioners' sugar
- 2 cups sweetened whipped cream
Directions[]
- To make Crust: Preheat oven to 325°F.
- Mix together graham cracker crumbs, sugar, and melted butter in a medium bowl.
- Pat graham cracker mixture into an 8" x 11" glass baking dish.
- Bake 15 minutes.
- To make Filling: Lower oven temperature to 300°F.
- Mix together eggs, granulated sugar, flour, lime juice, and vanilla in a large bowl until smooth.
- Pour Filling into Crust.
- Bake 40-45 minutes until Filling barely jiggles.
- Chill at least 6 hours, preferably overnight.
- To serve, sift confectioners' sugar over Filling.
- Cut and top with whipped cream.
