When not stretching at the barre or practicing her leaps, ballerina Lime Chiffon appreciates a citrusy dessert. So does her pet parrot Parfait! You don't heave to be a dancer or a bird to leap on these lime bars, though. They include key lime juice for extra tartness, a graham cracker crust, and whipped cream topping. (You can also omit the whipped cream, if preferred.)

  1. To make Crust: Preheat oven to 325°F.
  2. Mix together graham cracker crumbs, sugar, and melted butter in a medium bowl.
  3. Pat graham cracker mixture into an 8" x 11" glass baking dish.
  4. Bake 15 minutes.
  5. To make Filling: Lower oven temperature to 300°F.
  6. Mix together eggs, granulated sugar, flour, lime juice, and vanilla in a large bowl until smooth.
  7. Pour Filling into Crust.
  8. Bake 40-45 minutes until Filling barely jiggles.
  9. Chill at least 6 hours, preferably overnight.
  10. To serve, sift confectioners' sugar over Filling.
  11. Cut and top with whipped cream.
